Success!!!!!!!!!

I can't begin to describe my excitement! I have been at the same weight for like EVER! When I got married, when I got pregnant, after I lost my baby weight.. My number hasn't changed. Darn plateaus! Anyway, today I got on the scale and I'm down 2.8 lbs from that weight!!!!! Woohoo!! Not to toot my horn or anything, but I'm stoked! This was just the motivation that I needed to push through and keep on doing what I need to be doing! Just don't quit! And make it a lifestyle not a quick fix! You'll feel so much better, I promise! Secrets and more recipes coming soon :)

Chicken zucchini & mushroom spaghetti squash







2 chicken breasts (cooked and diced)
1 medium zucchini (diced)
Handful of mushrooms (sliced)
1tbsp garlic
1 medium spaghetti squash 
Marinara

Preheat oven to 375. Cut the spaghetti squash in half (longways) with the rind side up. Bake for approx 35-40 min, or until skin is easily pierced with a fork.

Sauté zucchini, garlic, and mushrooms in a little olive oil. Once its cooked (not mushy) add chicken and marinara (to preference). I like to season it with Italian seasoning and simmer for about 5 minutes. Top with a little bit of shredded Parmesan. Tada! Yummy comfort food without carbs.

Week 1

So technically I finished week 1 on Monday. It was a rough week! Although I didn't stick to my meal plan and all of my rules I did stick to a couple. I didn't eat after 8, I only drank water, and I tried really hard to get my veggies and water. I ended the week at 149.8. Woohoo a loss! If if I did this without working out and eating like crap.. Then what can I accomplish to if I go all in?! My big thing about this "diet" is that I don't want it to be just an 8 week weight loss plan. I want this to be a lifestyle change.. Eat healthy forever.  I also want to focus on how many options I do have to eat rather than everything that I can't eat. So here's to hoping this next week goes a little better.
